KFC-inspired Crispy Spiced Cauliflower Bites *(Serves 4)*

     Ingredients:

    - 1 large head cauliflower, cut into florets  
    - 1 cup all-purpose flour (or gluten-free flour)  
    - 1 cup plant-based milk (e.g., almond, oat)  
    - 1 tsp baking powder  
    - ½ tsp smoked paprika (optional, for depth)  
    - 1 cup panko breadcrumbs (or crushed cornflakes for gluten-free)  
    - Oil for frying (or cooking spray for baking)  

    For Serving:

    - Vegan ranch dip (mix F N Good Food Pickle Your Fancy Dill Pickle seasoning with vegan mayo, leave in refrigerator for 15-30 mins)  
    - Pickled jalapeños or carrot sticks  

    Instructions:

    1. Prep the Cauliflower:
       - Blanch cauliflower florets in boiling water for 2–3 minutes. Drain and pat dry thoroughly.  

    2. Make the Batter: 
       - In a bowl, whisk flour, plant-based milk, baking powder, 1 tsp KFC seasoning, and smoked paprika until smooth.  

    3. Coat the Cauliflower:  
       - Dip each floret into the batter, letting excess drip off. Roll in panko breadcrumbs mixed with the remaining 1 tsp seasoning mix. Press gently to adhere.  

    4. Cook Options:
       - Deep-Fry: Heat oil to 350°F (175°C). Fry florets in batches for 3–4 minutes until golden. Drain on paper towels.  
       - Bake: Preheat oven to 425°F (220°C). Arrange florets on a greased baking sheet. Spray with oil and bake for 20–25 minutes, flipping halfway .  
       - Air Fry: Cook at 400°F (200°C) for 12–15 minutes, shaking halfway.  

    5. Serve:
       - Pair with vegan ranch dip, pickled veggies, or a zesty slaw. Sprinkle extra seasoning on top for a flavour boost.
