Ingredients For the Chicken & Marinade:
· 1.5 lbs (approx. 700g) chicken breast tenders, or chicken breasts cut into strips
· 1 cup buttermilk (or plain, unsweetened yogurt thinned with a splash of water)
· 1 tsp hot sauce (optional)
For the Dredge & Frying:
· 1 ½ cups all-purpose flour (or gluten-free 1:1 baking flour)
· 1 tsp paprika
· 1 tsp garlic powder
· ½ tsp cayenne pepper (adjust to taste)
For the Herb & Honey Glaze:
· 3 tbsp hot honey (or regular honey mixed with ¼ tsp cayenne)
· 1 tbsp unsalted butter
· Flaky sea salt, for finishing
Instructions
Step 1: Marinate the Chicken (optional for Extra Tenderness)
2. Add the chicken tenders, ensuring they are fully submerged. Cover and refrigerate for at least 30 minutes, or up to 4 hours.

1. Remove a chicken tender from the buttermilk, letting the excess drip off.
2. Dredge it thoroughly in the seasoned flour mixture, pressing to adhere. Shake off any excess.
3. Place the coated tender on a wire rack set over a baking sheet. Repeat with all tenders.
4. Let the coated chicken rest for 10-15 minutes. This helps the coating set and adhere during frying.
Step 4: Fry the Chicken
1. In a large, heavy-bottomed skillet (cast iron is ideal), heat the
