Chicken Tagine

    Using F N Good Food's Moroccan Tagine Seasoning will make this recipe easy and flavourful.

    *(Serves 4-6)*

    Ingredients


    - 1.5 kg (3.3 lbs) chicken thighs or drumsticks (bone-in, skin-on for extra flavour)
    - 2 tbsp olive oil
    - 1 large onion, finely chopped
    - 3 garlic cloves, minced
    - 2-3 tsp Moroccan Tagine Seasoning (adjust to taste)
    - 1 preserved lemon (or zest of 1 fresh lemon)
    - 1 cup green olives (pits removed)
    - 1 cup chicken stock
    - 1 cup dried apricots or prunes (optional, for sweetness)
    - 1 tablespoon honey (optional, for extra sweetness)
    - Fresh cilantro or parsley, chopped (for garnish)
    - Salt and pepper, to taste

    Instructions


    1. Prepare the Chicken:
       - Season the chicken pieces generously with salt and pepper.
       - In a large heavy-bottomed pot, heat the olive oil over medium heat. Brown the chicken pieces on all sides until golden (about 3-4 minutes per side). Remove and set aside.

    2. Cook the Aromatics:
       - In the same pot, add the chopped onion and sauté until soft and translucent (about 5 minutes).
       - Add the minced garlic and 2-3 tsp of the Moroccan Tagine Seasoning. Stir well and cook for 1-2 minutes until fragrant.

    3. Add Liquids and Simmer:
       - Pour in the chicken stock and stir to combine.
       - Return the chicken to the pot, nestling the pieces into the sauce.
       - Add the preserved lemon (cut into quarters) and green olives. If using dried apricots or prunes, add them now.
       - Cover the pot and reduce the heat to low. Let it simmer for 45 minutes to 1 hour, or until the chicken is tender and cooked through.

    4. Finish and Serve:
       - If you’d like a touch of sweetness, drizzle honey over the dish and stir gently.
       - Garnish with fresh cilantro or parsley.
       - Serve hot with couscous, rice, or warm crusty bread to soak up the flavourful sauce.
