Chipotle Lime Roasted Sweet Potato Wedges with Avocado Dip

    This dish is a flavourful, smoky, and slightly spicy side or snack that’s perfect for sharing!

    Ingredients:

    For the Sweet Potato Wedges:

    - 2 large sweet potatoes, cut into wedges
    - 2 tablespoons olive oil (or avocado oil)
    - Juice of 1 lime

    For the Avocado Dip:

    - 1 ripe avocado, mashed
    - 1/4 cup plain Greek yogurt or sour cream
    - 1 tablespoon F N Good Food Chipotle Lime seasoning (adjust to taste)
    - Juice of 1 lime
    - 1 small garlic clove, minced (optional)
    - Salt to taste
    - 2 tablespoons chopped fresh cilantro (for garnish)

    Instructions:

    1. Preheat the Oven:
       - Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    2. Season the Sweet Potatoes:
       - In a large bowl, toss the sweet potato wedges with olive oil,  F N Good Food Chipotle Lime seasoning, and lime juice. Make sure the wedges are evenly coated.

    3. Roast the Sweet Potatoes:
       - Spread the wedges in a single layer on the prepared baking sheet. Roast for 25-30 minutes, flipping halfway through, until the wedges are tender and crispy on the edges.

    4. Make the Avocado Dip:
       - While the sweet potatoes are roasting, prepare the dip. In a medium bowl, combine the mashed avocado, Greek yogurt, F N Good Food Chipotle Lime seasoning, lime juice, and minced garlic (if using). Mix until smooth and creamy. Season with salt to taste and stir in the chopped cilantro.

    5. Serve:
       - Arrange the roasted sweet potato wedges on a platter and serve with the avocado dip on the side. Garnish with extra cilantro and lime wedges if desired.

    Optional Add-Ons:
    - Sprinkle the wedges with crumbled queso fresco or feta cheese for extra flavour.
    - Add a drizzle of hot honey for a sweet and spicy twist.
    - Serve with a side of black beans or a fresh corn salad.
