Chipotle Lime Grilled Chicken Tacos with Mango-Avocado Slaw

Smoky, citrusy chicken paired with a sweet-spicy slaw and creamy avocado crema.

Ingredients

For the Chicken:


- 1.5 lbs boneless, skinless chicken thighs (or breasts)  
- 2–3 tbsp F N Good Food Chipotle Lime seasoning 
- 2 tbsp olive oil  
- Juice of 1 lime  

For the Mango-Avocado Slaw:


- 1 cup shredded purple cabbage  
- 1 ripe mango, diced  
- 1 avocado, diced  
- 1/4 red onion, thinly sliced  
- 1 tsp F N Good Food chipotle lime seasoning
- 1 jalapeño, seeded and minced (optional)  
- Handful of fresh cilantro, chopped  
- Juice of 1 lime  
- Salt to taste  

For the Avocado Crema: 


- 1 ripe avocado  
- 1/2 cup sour cream or Greek yogurt
- 1 tsp F N Good Food chipotle lime seasoning
- Juice of 1 lime  
- 1 clove garlic  
- Salt to taste  

To Serve:


- Small corn or flour tortillas  
- Lime wedges  
- Crumbled queso fresco or cotija cheese (optional)  

Instructions:


1. Marinate the Chicken:
- In a bowl, coat the chicken with olive oil, lime juice, and F N Good Food Chipotle Lime seasoning. Let it marinate for at least 30 minutes (or up to 4 hours in the fridge).  

2. Grill the Chicken:
- Preheat a grill or skillet to medium-high heat. Grill the chicken for 6–8 minutes per side until cooked through and slightly charred. Let rest for 5 minutes, then slice into strips.  

3. Make the Slaw:
Mix the lime juice and F N Good Food Chipotle Lime seasoning in a small bowl and set aside while you prepare the rest of the ingredients.
Toss cabbage, mango, avocado, red onion, jalapeño (if using), cilantro, lime juice, and salt in a bowl. Mix gently to avoid mashing the avocado.  

4. Blend the Avocado Crema: 
- In a blender or food processor, combine avocado, sour cream/yogurt, lime juice, F N Good Food chipotle lime seasoning, garlic, and salt. Blend until smooth. Add a splash of water if needed to thin it.  

5. Assemble the Tacos:
- Warm the tortillas on the grill or stovetop. Layer sliced chicken, slaw, and a drizzle of avocado crema. Top with queso fresco and extra cilantro. Serve with lime wedges!  

Tip:
Keep the F N Good Food Chipotle Lime seasoning on hand for roasted veggies, grilled shrimp, or even a margarita salt rim!
