Apple-Tomato Pork Tenderloin

    This Smoky Apple-Tomato Pork Tenderloin recipe highlights sweet, tangy, and smoky flavours, perfect for a hearty meal.  

    *(Serves 4)*  

    Ingredients:

    Pork Tenderloin

    - 1.5 lbs pork tenderloin  
    - 2 tbsp olive oil  
    - Fresh thyme or rosemary (optional, for garnish)

    Apple Cider Vinegar Glaze 

    - ¼ cup apple cider vinegar  
    - 2 tbsp brown sugar  

    Instructions

    1. Prep the Pork:
       - Pat the tenderloin dry. Rub 1 tbsp olive oil all over the meat.  
       - Generously coat the pork with the **F N Good Food Ketchup seasoning, pressing to adhere. Let sit at room temp for 20 minutes.  

    2. Sear & Roast: 
       - Preheat oven to 400°F (200°C).  
       - Heat remaining oil in an oven-safe skillet over medium-high heat. Sear the pork on all sides until browned (~2–3 minutes per side).  
       - Transfer skillet to the oven. Roast for 15–18 minutes, until internal temp reaches 145°F (63°C).  

    3. Make the Glaze:  
       - While pork roasts, combine all glaze ingredients in a small saucepan. Simmer over medium heat until thickened (~5 minutes).  

    4. Glaze & Rest: 
       - Brush the glaze over the pork during the last 5 minutes of roasting.  
       - Let pork rest for 5–10 minutes before slicing. Garnish with herbs.  

    Serving Suggestions
    - With Roasted Veggies: Toss carrots, Brussels sprouts, or sweet potatoes in leftover dry rub and roast alongside the pork.  
    - Over Polenta: Serve slices atop creamy polenta with extra glaze drizzled on top.  
    - Sandwiches: Slice thinly and pile onto crusty rolls with pickled onions and arugula.

    Vegetarian Option
    Replace pork with cauliflower steaks or portobello mushrooms. Adjust roasting time to 20–25 minutes.
